Slow Cooker Dumpling Soup Base

Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 6 cup chicken broth, low sodium
  • 2 cup water
  • 2 inch piece fresh ginger, peeled and thinly sliced
  • 4 garlic cloves, minced
  • 8 oz cremini mushrooms, sliced
  • 2 large carrots, peeled and sliced into rounds
  • 2 celery stalks, sliced
  • 3 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 3 green onions, thinly sliced

Instructions

    Prepare all vegetables: Thinly slice the ginger, mince the garlic, slice the mushrooms, peel and slice the carrots into rounds, and slice the celery stalks.

    Place the boneless, skinless chicken thighs at the bottom of your slow cooker. This allows them to cook thoroughly and absorb flavors.
