Ingredients
- •1 cup Granulated Sugar
- •1 cup Water
- •3-4 sprigs (about 4-5 inches long each) Fresh Rosemary Sprigs
- •16 oz (approx. 2/3 of a 750ml bottle) Chilled Prosecco
- •4 oz Elderflower Liqueur
- •4 oz Rosemary Simple Syrup
- •2 limes (for juice and wedges) Fresh Limes
- •24-32 leaves Fresh Mint Leaves
- •8 oz Chilled Soda Water
- •As needed Ice
Instructions

**Prepare the Rosemary Simple Syrup:** In a small saucepan, combine 1 cup granulated sugar, 1 cup water, and 3-4 fresh rosemary sprigs. Bring to a simmer over medium heat, stirring until the sugar is fully dissolved. Once simmering, remove from heat and let the rosemary steep in the syrup for at least 15-20 minutes, or until cooled completely. Remove and discard the rosemary sprigs. Store the syrup in an airtight container in the refrigerator until ready to use (can be made several days in advance).

**Assemble the Spritzes:** For each spritz, place 6-8 fresh mint leaves and the juice of 1/4 lime into a large wine glass or tumbler. Gently muddle the mint leaves with a muddler or the back of a spoon to release their aromatic oils (do not over-muddle, just a few presses).

**Build the Drink:** Fill the glass generously with ice. Add 1 oz (30ml) of elderflower liqueur and 1 oz (30ml) of the prepared rosemary simple syrup to the glass.

**Top it Off:** Slowly pour in 4 oz (120ml) of chilled Prosecco, followed by 2 oz (60ml) of chilled soda water.

**Garnish and Serve:** Gently stir to combine. Garnish each spritz with a fresh lime wedge or wheel and an additional small sprig of fresh rosemary and/or mint. Serve immediately.
