Quick Tuna and Tomato Pasta

Ingredients

- •28 oz canned diced tomatoes, undrained
- •2 5-oz cans canned tuna in olive oil, drained
- •1 tablespoon capers, drained
- •0.25 cup Kalamata olives, pitted and halved (optional)
- •0.25 cup fresh parsley, chopped

Instructions

Bring a large pot of generously salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente. Before draining, reserve 1 cup of the starchy pasta water.

While the pasta cooks, heat the olive oil in a large skillet or deep pan over medium heat. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 3-5 minutes.

Add the minced garlic and red pepper flakes to the skillet. Cook for another 1 minute, stirring constantly, until fragrant. Be careful not to burn the garlic.
