Ingredients

  • 500 g Fresh Okra (Bhindi) (small, tender pods)
  • 2 piece Large Onions (thinly sliced)
  • 2 piece Medium Tomatoes (finely chopped)
  • 1 tsp Ginger-Garlic paste
  • 0.5 tsp Turmeric powder (Haldi)
  • 1 tsp Red Chili powder (or Paprika for less heat)
  • 1 tsp Cumin seeds (Zeera)
  • 1 tsp Coriander powder
  • 0.5 tsp Dry Mango powder (Amchur) (or 1 tbsp lemon juice)

  • 3 piece Green chilies (slit lengthwise)
  • 0.25 cup Fresh coriander leaves (chopped, for garnish)
  • 3 tbsp Olive oil or Mustard oil

Instructions

    Wash the okra thoroughly and pat it completely dry with a kitchen towel. This is crucial for preventing sliminess. Cut off the heads and tails, then slice the okra into 1/2-inch rounds.

    In a large, wide pan (to avoid crowding the okra), heat 1.5 tbsp of the oil over medium-high heat. Add the sliced okra and sauté for 5-7 minutes until the edges turn slightly golden and any initial 'sticky' threads disappear. Remove the okra from the pan and set it aside.

    In the same pan, add the remaining 1.5 tbsp of oil and the cumin seeds. Once the cumin seeds sizzle, add the thinly sliced onions. Sauté the onions until they are translucent and just beginning to brown at the edges (about 5-7 minutes). Add the ginger-garlic paste and sauté for another minute until fragrant.
