Ingredients

  • 2 tablespoon coconut oil or vegetable oil
  • 1 large yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated or finely minced
  • 1 green chili, deseeded and minced (optional)
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon red chili powder (optional, for heat)
  • 14.5 oz canned diced tomatoes, undrained
  • 15 oz canned chickpeas, drained and rinsed
  • 13.5 oz full-fat coconut milk
  • 0.5 cup water or vegetable broth
  • 5 oz fresh spinach, roughly chopped

  • 0.25 cup fresh cilantro, chopped (for garnish)

Instructions
