One-Pan Lemon Herb Chicken & Roasted Sweet Potatoes
A delicious and easy one-pan meal featuring succulent lemon herb chicken thighs roasted alongside tender, caramelized sweet potatoes.
Ingredients

- •2 large sweet potatoes, peeled and cut into 1-inch cubes

- •1 large lemon, juiced and sliced
- •4 garlic cloves, minced
- •1 tablespoon fresh rosemary, chopped
- •1 tablespoon fresh thyme leaves
- •1 teaspoon dried oregano
- •1 teaspoon paprika
- •1 teaspoon salt
- •0.5 teaspoon black pepper, freshly ground
- •2 tablespoon fresh parsley, chopped, for garnish
Instructions
