Preheat your oven to 175°C (350°F). Grease and flour a 6-inch (15 cm) springform pan or cake ring, or line the bottom with parchment paper.

Melt 15g unsalted butter for the génoise and set aside to cool slightly.

In a heatproof bowl set over a saucepan of simmering water (bain-marie), combine 2 large eggs and 50g granulated sugar. Whisk constantly until the mixture is warm (about 40-45°C / 105-115°F) and the sugar is dissolved.

Remove the bowl from the heat. Using an electric mixer, whisk the egg mixture on high speed for 5-7 minutes until it is very thick, pale, and has tripled in volume. It should form a thick ribbon when the whisk is lifted.

Sift 30g all-purpose flour and 15g unsweetened cocoa powder over the egg mixture in two additions. Gently fold them in with a spatula until just combined, being careful not to deflate the mixture.

Take a small amount of the batter and mix it into the cooled melted butter to lighten the butter. Then gently fold the butter mixture back into the main batter until just incorporated.

Pour the génoise batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until a skewer inserted into the center comes out clean.

Let the génoise cool in the pan for 5 minutes, then invert it onto a wire rack, remove the pan, and let it cool completely. Once cool, trim if necessary to fit perfectly in the bottom of your cake ring/springform pan.

For the mousse, melt 150g chopped dark chocolate and 30g unsalted butter in a heatproof bowl over a bain-marie, stirring until smooth. Remove from heat and let cool slightly.

Separate 3 large eggs. Add the 3 egg yolks to the slightly cooled chocolate mixture. Whisk vigorously until well combined and smooth.

In a very clean, dry bowl, whisk the 3 egg whites until soft peaks form. Gradually add 40g granulated sugar, continuing to whisk until stiff, glossy peaks form (meringue).

Gently fold one-third of the meringue into the chocolate mixture to lighten it. Then, carefully fold in the remaining meringue in two additions until just combined, taking care not to deflate the mousse. Do not overmix.

Line the bottom of your 6-inch (15 cm) springform pan or cake ring with parchment paper, and if using a cake ring, line the sides with acetate strips for a clean finish. Place the cooled chocolate génoise base at the bottom.

Pour the chocolate mousse over the génoise base, spreading it evenly. Gently tap the pan on the counter a few times to release any air bubbles.

Pipe a circular 'nest' border around the top edge of the cake, building up a few layers to create a raised rim. You can also pipe thin, irregular lines across the center to resemble twigs.
