Hearty Peanut Butter and Jelly Muffins
These hearty muffins are packed with oats and have a delicious peanut butter and jelly surprise in the middle. Perfect for a filling breakfast or snack!
Ingredients
- •1 cup All-Purpose Flour
- •1 cup Rolled Oats
- •1/2 cup Brown Sugar (packed)
- •2 tsp Baking Powder
- •1/2 tsp Baking Soda
- •1/4 tsp Salt
- •1 piece Egg (large)
- •1 cup Milk
- •1/4 cup Vegetable Oil
- •1 tsp Vanilla Extract
- •1/2 cup Peanut Butter (creamy)
- •1/2 cup Jelly (any flavor)
Instructions

Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.

In a large bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, and salt.
Time: 3 min - 3.
In a separate bowl, whisk together the egg, milk, oil, and vanilla extract.
Time: 2 min - 4.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Time: 2 min - 5.
Fill each muffin cup about 1/3 full with the batter.
Time: 3 min - 6.
Drop about 1 teaspoon of peanut butter and 1 teaspoon of jelly into the center of each muffin cup.
Time: 3 min - 7.
Top with the remaining batter, filling each cup about 2/3 full.
Time: 3 min - 8.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Time: 25 min - 9.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
