  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper, freshly ground
  • 8 oz sharp cheddar cheese, freshly grated
  • 4 oz Gruyere cheese, freshly grated
  • 0.5 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 2 tablespoon fresh cilantro or parsley, chopped
