  • 2 large Sweet potatoes (peeled and diced into 1-inch cubes)
  • 1 28 oz can Canned diced tomatoes (undrained)
  • 2 cups Vegetable broth
  • 1 15 oz can Canned chickpeas (rinsed and drained)
  • 5 oz Spinach (fresh baby spinach)

  • 1/4 cup Fresh cilantro (chopped, for garnish)

Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.
