Egg & Avocado Toast
A hearty avocado toast topped with a perfectly cooked egg.
Ingredients

- •4 slices Good quality bread (sourdough or whole grain recommended)
- •4 Large eggs
- •2 tablespoons Extra virgin olive oil
- •1 tablespoon Fresh lime or lemon juice
- •1/2 teaspoon Sea salt
- •1/4 teaspoon Freshly ground black pepper
- •1/2 teaspoon Red pepper flakes (optional)
- •2 tablespoons Fresh cilantro or chives, chopped (optional, for garnish)
Instructions

Prepare the avocado mash: Halve the avocados, remove the pits, and scoop the flesh into a medium bowl. Add the lime or lemon juice, sea salt, black pepper, and red pepper flakes (if using). Mash with a fork to your desired consistency – chunky or smooth.

Toast the bread: Toast the bread slices in a toaster or a skillet over medium heat until golden brown and crisp. A well-toasted slice provides a good base for the avocado.

Cook the eggs: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Carefully crack the eggs into the pan, ensuring they don't touch. Cook sunny-side up until the whites are fully set but the yolks are still perfectly runny, about 2-3 minutes. Season with a pinch of salt and pepper. For over-easy eggs, carefully flip and cook for another 30 seconds.
