Ingredients

  • 2 Large ripe avocados
  • 4 slices Good quality bread (sourdough or whole grain recommended)
  • 4 Large eggs
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Fresh lime or lemon juice
  • 1/2 teaspoon Sea salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1/2 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh cilantro or chives, chopped (optional, for garnish)

Instructions

  1. 1.

Prepare the avocado mash: Halve the avocados, remove the pits, and scoop the flesh into a medium bowl. Add the lime or lemon juice, sea salt, black pepper, and red pepper flakes (if using). Mash with a fork to your desired consistency – chunky or smooth.

  2. 2.

Toast the bread: Toast the bread slices in a toaster or a skillet over medium heat until golden brown and crisp. A well-toasted slice provides a good base for the avocado.

  3. 3.

Cook the eggs: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Carefully crack the eggs into the pan, ensuring they don't touch. Cook sunny-side up until the whites are fully set but the yolks are still perfectly runny, about 2-3 minutes. Season with a pinch of salt and pepper. For over-easy eggs, carefully flip and cook for another 30 seconds.

  4. 4.

Assemble the toast: Drizzle each toasted bread slice with a little olive oil, if desired. Spread a generous layer of the mashed avocado evenly over each slice.

  5. 5.

Serve immediately: Carefully place one perfectly cooked egg on top of each avocado toast. Garnish with additional red pepper flakes and fresh chopped cilantro or chives, if using. Serve warm.

Tips

  • 💡Choosing ripe avocados is key: they should yield slightly to gentle pressure. If unripe, they will be hard; if overripe, they will be very soft and bruised.
  • 💡For perfectly runny yolks, ensure your skillet isn't too hot, and don't overcrowd the pan when cooking eggs. Cook them in batches if necessary.
  • 💡Don't skimp on seasoning the avocado! Salt, pepper, and a touch of acid from lime or lemon juice bring out the best flavor.
  • 💡Experiment with different types of bread; a hearty sourdough or a multi-grain bread provides a great texture contrast to the creamy avocado and egg.
  • 💡For extra flavor, you can rub a cut garlic clove over the toasted bread before adding the avocado.
