Cypriot Bulgur Pilaf with Tomatoes & Mint

Ingredients

  • 2 tbsp Olive oil
  • 1 piece White onion (medium, finely chopped)
  • 1/2 cup Vermicelli pasta (broken into 1-inch pieces)
  • 2 tbsp Tomato paste
  • 1 cup Cypriot bulgur (coarse grain)
  • 15 oz Crushed tomatoes (canned, or 1.5 cups fresh diced tomatoes)
  • 2.5 cup Chicken stock
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Fresh mint (chopped, plus extra for garnish)
  • 1 cup Greek yogurt (for serving)

Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped white onion and sauté until softened and translucent, about 5-7 minutes.

    Add the broken vermicelli pasta to the pot. Stir continuously and toast until golden brown, about 2-3 minutes. Be careful not to burn it.
