Ingredients

  • 1 tbsp Olive oil
  • 1 piece Yellow onion (medium, chopped)
  • 2 piece Carrots (medium, peeled and chopped)
  • 2 piece Celery stalks (chopped)
  • 3 cloves Garlic (minced)
  • 4 cup Low sodium chicken broth
  • 1.5 cup Cooked chicken breast (shredded or diced, ensure it's unsalted or low-sodium if possible)
  • 2 cup Fresh spinach (packed)
  • 0.5 cup Heavy cream
  • 2 scoops Unflavored protein powder ((approx. 40-50g))
  • 0.5 tsp Dried thyme
  • to taste to taste Salt ((start with a pinch, or omit if preferred, especially with low-sodium broth))
  • to taste to taste Black pepper
  • 1 tbsp Fresh parsley (chopped, for garnish (optional))

Instructions

    Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Sauté for 5-7 minutes until vegetables start to soften.
