Creamy Chicken and Egg Noodles
A heartwarming and incredibly easy one-pot meal featuring tender shredded chicken, rich cream of chicken soup, and perfectly cooked egg noodles simmered in flavorful chicken broth. It's the ultimate comfort food for a cozy evening.
Ingredients
- •1 lb Boneless, skinless chicken breasts or thighs (cut into 1-inch pieces)
- •24 oz Egg noodles (two 12oz packages)
- •8 cup Chicken broth (plus more if needed)
- •3 can Cream of chicken soup (10.5 oz each, undiluted)
- •1 tsp Garlic powder (divided)
- •1 tsp Onion powder (divided)
- •1/2 tsp Salt (or to taste, divided)
- •1/2 tsp Black pepper (or to taste, divided)
- •1 tbsp Olive oil or vegetable oil
Instructions
- 1.
In a large skillet or Dutch oven, heat olive oil over medium heat. Add the chicken pieces and season with 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook, stirring occasionally, until the chicken is cooked through and no longer pink, about 6-8 minutes.
Time: 8 min - 2.
Remove the cooked chicken from the skillet and set aside to cool slightly. Once cool enough to handle, shred the chicken using two forks or chop into small pieces.
Time: 5 min - 3.
Pour 8 cups of chicken broth into the same large skillet or Dutch oven (no need to clean it). Bring the broth to a rolling boil over medium-high heat. Add the egg noodles and cook according to package directions until tender, typically 7-10 minutes.
Time: 10 min - 4.
Once the noodles are cooked, reduce the heat to low. Stir in the shredded chicken and the three cans of undiluted cream of chicken soup. Mix until everything is well combined and heated through.
Time: 5 min - 5.
Taste the creamy chicken and noodles and adjust seasoning as needed, adding the remaining garlic powder, onion powder, salt, and pepper to your preference. If the mixture is too thick, you can add a little more chicken broth until desired consistency is reached. Serve hot and enjoy!
Time: 2 min
Tips
- 💡For extra flavor, sauté a diced onion and/or celery with the chicken in step 1.
- 💡If you prefer a thicker sauce, you can use slightly less chicken broth when cooking the noodles, or let the dish simmer a bit longer on low heat.
- 💡This dish reheats well! Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You might need to add a splash of chicken broth or water when reheating to loosen it up.
