Chicken Curry with Carrots and Potatoes

Ingredients

  • 1.5 lb Chicken thighs (boneless, skinless, cut into 1-inch pieces)
  • 2 medium Potatoes (peeled and cubed)
  • 2 medium Carrots (peeled and sliced)
  • 1 large Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)
  • 2 tbsp Tomato paste
  • 1 14.5 oz can Diced tomatoes
  • 1 cup Chicken broth
  • 1/2 cup Heavy cream
  • 2 tbsp Vegetable oil
  • 2 tsp Garam masala
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Chili powder (adjust to taste)
  • 1 tsp Salt (to taste)
  • 2 tbsp Fresh cilantro (chopped, for garnish)

Instructions

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
