- •2 cups baby spinach, packed
- •2 tablespoon fresh cilantro, chopped
- •1 whole lime, cut into wedges
Instructions

Heat olive oil in a large 12-inch nonstick or cast-iron skillet over medium-high heat.

Add the diced sweet potatoes, diced onion, red bell pepper, and chicken broth to the skillet. Cover immediately with a tight-fitting lid and cook for 5 to 6 minutes, allowing the steam to rapidly soften the sweet potatoes.

Remove the lid and push the vegetables to the outer edges of the pan. Add the ground turkey to the center of the skillet, breaking it apart with a wooden spoon, and cook for 4 to 5 minutes until browned and cooked through.
