Ingredients

  • 8 oz (about 1/2 lb) spaghetti or fettuccine noodles
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the noodles.
  2. While the noodles cook, melt the butter in a large skillet over medium heat. Add the minced garlic and cook for 1–2 minutes, stirring frequently, until fragrant but not browned.
  3. If using, add the crushed red pepper flakes and cook for 30 seconds.
  4. Add the drained noodles to the skillet. Toss to coat in the garlic butter. If the noodles seem dry, add a splash of reserved pasta water.
  5. Stir in the Parmesan cheese and parsley (if using). Season with salt and black pepper to taste.
  6. Serve immediately, with extra Parmesan on top if desired.
