Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon yellow curry powder
  • 1 teaspoon ground turmeric
  • 1 can (14 oz) coconut milk
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional: 1 teaspoon grated ginger for extra flavor

Instructions

  1. Sauté the Aromatics: In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Add the minced garlic (and grated ginger if using) and sauté for another 30 seconds until fragrant.
  2. Add the Spices: Stir in the yellow curry powder and ground turmeric. Cook for about 1 minute, stirring constantly, to toast the spices and release their flavors.
  3. Add Coconut Milk: Pour in the coconut milk, stirring well to combine with the spices. Bring the mixture to a gentle simmer.
  4. Season the Sauce: Add the fish sauce (or soy sauce), brown sugar, salt, and pepper. Stir well to incorporate all the ingredients.
  5. Simmer: Let the sauce simmer gently for about 5-10 minutes, allowing the flavors to meld together. Stir occasionally.
  6. Finish with Lime Juice: Remove the sauce from heat and stir in the lime juice. Adjust seasoning to taste.
  7. Serve: Use the yellow curry sauce as a base for your favorite proteins or vegetables, or serve it over rice or noodles.
