Quesadillas (No Maida, No Sugar)
These vegetarian quesadillas are made with homemade tortillas and filled with beans, salsa, and cheese—no maida, no sugar, and no tofu or paneer. A wholesome Mexican treat!
Ingredients
For Tortillas
- 2 cups multigrain flour or whole wheat flour
- 1/2 cup boiled yellow moong dal
- Chilli flakes, to taste
- Oregano, to taste
- Sesame seeds
- Salt and black pepper, to taste
- Water, as needed
For Filling & Assembly
- Prepared beans (see Mexican Tacos recipe)
- Prepared salsa (see Mexican Tacos recipe)
- Prepared sour cream (see Mexican Tacos recipe)
- Grated cheese, as desired
- Additional oregano and chilli flakes, to taste
- 2–3 tablespoons whole wheat or multigrain flour (for slurry)
- Water (for slurry)
- Oil or ghee, for roasting
Instructions
- Combine flour, moong dal, and seasonings. Knead into a soft dough and let rest.
- Divide and roll into thin rotis. Roast on a hot tawa until just done.
- Mix flour and water to make a slurry for sealing.
- Spread salsa, beans, and cheese on one tortilla. Top with another, seal edges with slurry, and roast until crisp and golden.
- Cut into pieces and serve with sour cream, salsa, and guacamole.
Tips
- Add fresh coriander or jalapeños for extra flavor.
- For a vegan version, use plant-based cheese and yogurt.
