Potato Mojos

Ingredients

  • 4 medium russet potatoes, unpeeled
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon garlic powder

  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil, for frying

Instructions

  1. Prepare the Potatoes: Wash the potatoes thoroughly and slice them into 1/4-inch thick rounds. Pat dry with paper towels.
  2. Make the Seasoned Coating: In a large bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  3. Prepare the Egg Wash: In a separate bowl, beat the eggs and milk together.
  4. Coat the Potatoes: Dip each potato slice into the egg wash, then dredge in the seasoned flour mixture, pressing lightly to coat well. Shake off any excess.
  5. Heat the Oil: Pour vegetable oil into a deep skillet or frying pan to about 1 inch deep. Heat over medium-high heat until the oil reaches 350°F (175°C).
  6. Fry the Mojos: Fry the coated potato slices in batches, making sure not to overcrowd the pan. Cook for 3–4 minutes per side, or until golden brown and crispy.
  7. Drain and Season: Remove the mojos with a slotted spoon and drain on a plate lined with paper towels. Sprinkle with a little extra salt while hot, if desired.
  8. Serve: Serve hot with your favorite dipping sauce, such as ranch or garlic mayo.
