Ingredients

  • 12 oz (about 3/4 box) fettuccine or linguine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 (28 oz) can crushed tomatoes
  • 2 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • 1/2 cup fresh basil leaves, chopped (plus extra for garnish)
  • 1 cup cherry tomatoes, halved (optional)
  • Extra Parmesan, for serving

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2–3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Pour in the crushed tomatoes and broth. Stir in salt, pepper, red pepper flakes (if using), and dried oregano.
  3. Add the uncooked pasta to the pot, making sure it’s submerged in the liquid. If needed, break the pasta in half to fit.
  4. Bring the mixture to a boil, then reduce heat to a simmer. Cook uncovered, stirring frequently, for 10–12 minutes, or until the pasta is al dente and most of the liquid is absorbed.
  5. Stir in the heavy cream, Parmesan cheese, and cherry tomatoes (if using). Simmer for another 2–3 minutes until the sauce is creamy and the pasta is fully cooked.
  6. Remove from heat and stir in the chopped basil.
  7. Serve immediately, garnished with extra basil and Parmesan.

Tips & FAQ

  • Can I use a different pasta? Yes! Penne, spaghetti, or any short pasta works well—just adjust the cooking time as needed.
  • How do I make it vegan? Use plant-based cream and cheese, and vegetable broth.
  • Storage: Leftovers keep in the fridge for up to 3 days. Reheat gently with a splash of broth or cream.
