Mexican Chilaquiles Verdes

Mexican Chilaquiles Verdes is a classic breakfast dish featuring crispy tortilla chips tossed in tangy green salsa, topped with fried eggs, crumbled cheese, crema, and fresh herbs. It’s a vibrant, comforting meal that’s perfect for starting your day with bold flavors!

Ingredients

  • 6 oz (about 6 cups) tortilla chips (homemade or store-bought)
  • 1 1/2 cups salsa verde (store-bought or homemade)
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1/4 cup crumbled queso fresco or feta cheese
  • 1/4 cup Mexican crema or sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 small red onion, thinly sliced (optional)
  • Salt and pepper, to taste

Instructions

  1. Warm the Salsa Verde:
In a large skillet, heat the salsa verde over medium heat until simmering.
  2. Add the Chips:
Add the tortilla chips to the skillet and gently toss to coat in the salsa. Cook for 2-3 minutes until the chips are slightly softened but still a bit crispy.
  3. Fry the Eggs:
In a separate skillet, heat the oil over medium heat. Crack in the eggs and fry until the whites are set but yolks are still runny, about 3-4 minutes. Season with salt and pepper.
  4. Assemble:
Divide the salsa-coated chips between two plates. Top each with a fried egg, crumbled queso fresco, crema, cilantro, and red onion if using.
  5. Serve:
Serve immediately while hot and enjoy!
