- 1/2 cup honey
- 2 large eggs, room temperature
- 1 tablespoon pure vanilla extract
- 3 ripe bananas, mashed (about 1 1/4 cups)
- 1/4 cup plain Greek yogurt or sour cream
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
- In a large bowl, whisk together the melted butter and honey until smooth. Add the eggs and vanilla extract, whisking until well combined.
- Stir in the mashed bananas and Greek yogurt (or sour cream) until fully incorporated.
- Add the dry ingredients to the wet ingredients and gently fold together with a spatula until just combined. Do not overmix.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
