Green Chili Turkey Stew (Slow Cooker)

Ingredients

  • 2 lbs ground turkey
  • 1 large onion, diced
  • 3 large carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 (40 oz) jar 505 Hatch Valley Green Chili Sauce (buy on Amazon)
  • 1 quart (4 cups) chicken stock
  • 2 tsp ground cumin
  • 1 (15 oz) can hominy, drained and rinsed
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional toppings: chopped cilantro, diced avocado, shredded cheese, sour cream, lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks. Season lightly with salt and pepper. Transfer browned turkey to the slow cooker.
  2. In the same skillet, add diced onion, carrots, and celery. Sauté for 3-4 minutes until just starting to soften. Add minced garlic and cook for 1 more minute. Transfer vegetables to the slow cooker.
  3. Add the 505 Hatch Valley Green Chili Sauce, chicken stock, and ground cumin to the slow cooker. Stir to combine all ingredients.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until vegetables are tender and flavors are well combined.
  5. About 30 minutes before serving, stir in the drained hominy. Taste and adjust seasoning with additional salt and pepper if needed.
  6. Serve hot, topped with your favorite garnishes such as cilantro, avocado, cheese, sour cream, or a squeeze of lime.
