Ingredients
- 1 lb boneless chicken thighs
- 1 block (14 oz) firm tofu, drained and cubed
- 1 block feta cheese, sliced or cubed
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 red onion, sliced
- 2 bell peppers (any color), sliced
- 1 cup cherry tomatoes, halved

Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper.
- Add the chicken thighs and cubed tofu to the bowl, tossing to coat them evenly in the marinade.
- Arrange the chicken thighs and tofu on the prepared baking sheet.
