Greek Sheet Pan Dinner with Tofu, Feta, and Chicken Thighs

This Greek Sheet Pan Dinner is a delightful and easy-to-make meal that combines the flavors of the Mediterranean with the convenience of a one-pan dish. Featuring boneless chicken thighs, tofu, and a medley of vegetables, this recipe is perfect for a quick weeknight dinner or a casual gathering with friends.

Ingredients

  • 1 lb boneless chicken thighs
  • 1 block (14 oz) firm tofu, drained and cubed
  • 1 block feta cheese, sliced or cubed
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 red onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 cup cherry tomatoes, halved
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper.
  3. Add the chicken thighs and cubed tofu to the bowl, tossing to coat them evenly in the marinade.
  4. Arrange the chicken thighs and tofu on the prepared baking sheet.
  5. Add the sliced onion, bell peppers, and cherry tomatoes to the baking sheet, spreading them out evenly around the chicken and tofu.
  6. Place the sliced or cubed feta cheese on top of the vegetables and tofu.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through, the vegetables are tender, and the feta is softened and slightly golden.
  8. Garnish with fresh parsley before serving.
