Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it well.
  2. In a large bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, whisk the eggs, honey (or maple syrup), melted coconut oil, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. (Optional) For the glaze: Mix powdered sugar with lemon juice until smooth. Drizzle over the cooled loaf before slicing.
