Pork Tenderloin
- 2 lbs pork tenderloin
- Salt and pepper to taste

- 1 cup dry white wine
- 2 tablespoons Dijon mustard

Spätzle
- 1 package dry Spätzle
- Water for boiling
- Salt
- 2 tablespoons butter
Instructions
Pork Tenderloin and Creamy Mushroom Sauce
- Preheat your oven to 350°F (175°C).
- Season the pork tenderloin with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat. Sear the pork tenderloin on all sides until browned. Remove and set aside.
- In the same Dutch oven, add chopped onion and garlic. Sauté until the onion is translucent.
- Add sliced mushrooms and cook until they release their moisture and become golden brown.
- Add beef broth, white wine, Dijon mustard, thyme, and rosemary. Stir to combine.
- Return the pork tenderloin to the Dutch oven. Cover and roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove the pork tenderloin from the Dutch oven and let it rest.
- Place the Dutch oven back on the stove over medium heat. Stir in heavy cream and Worcestershire sauce into the mushroom mixture. Simmer until the sauce thickens.
- Season with salt and pepper to taste.
Spätzle
- Bring a large pot of salted water to a boil.
- Add the dry Spätzle and cook according to package instructions.
