Ingredients

For the Garlic Parmesan Pork Chops

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted

For the Cheesy Scalloped Potatoes

  • 2 pounds russet potatoes (about 4 large), peeled and thinly sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional, for topping)
  • 2 tablespoons grated Parmesan cheese (for topping)

Instructions

1. Prepare the Cheesy Scalloped Potatoes

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a medium saucepan, melt 2 tablespoons butter over medium heat. Add 2 cloves minced garlic and cook for 1 minute until fragrant.
  3. Stir in 2 tablespoons flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in 1 1/2 cups milk. Cook, whisking, until the sauce thickens, about 3–4 minutes.
  5. Remove from heat. Stir in 1 cup cheddar cheese and 1/2 cup mozzarella cheese until melted. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  6. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes. Repeat with remaining potatoes and sauce.
  7. Sprinkle 2 tablespoons grated Parmesan and a pinch of paprika on top.
  8. Cover with foil and bake for 30 minutes.

2. Prepare the Garlic Parmesan Pork Chops

  1. While potatoes bake, pat pork chops dry with paper towels. Rub both sides with olive oil.
  2. In a small bowl, mix salt, pepper, garlic powder, and Italian seasoning. Sprinkle evenly over both sides of the pork chops.
  3. In another bowl, combine grated Parmesan, minced garlic, and melted butter.
  4. After potatoes have baked for 30 minutes, remove foil. Nestle pork chops on top of the potatoes. Spread the Parmesan mixture evenly over the pork chops.
  5. Return the dish to the oven, uncovered, and bake for 25–30 minutes, or until pork chops reach an internal temperature of 145°F (63°C) and potatoes are tender.
  6. If desired, broil for 2–3 minutes to brown the top.

3. Serve

  1. Let the dish rest for 5 minutes before serving. Spoon potatoes onto plates and top with a pork chop. Garnish with extra Parmesan or fresh herbs if desired.

Tips

  • For extra flavor, add a sprinkle of fresh chopped parsley or chives before serving.
  • You can substitute boneless chicken breasts for pork chops if preferred.
  • Slice potatoes as evenly as possible for even cooking.
