Garlic Herb Chicken & Potato Bowl

Garlic Herb Chicken & Potato Bowl is a hearty, flavorful meal featuring juicy, herb-seasoned chicken and crispy baby potatoes, all tossed in a garlicky, buttery sauce and finished with fresh parsley and Parmesan. Perfect for a comforting dinner or meal prep!

Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into 1-inch cubes
  • 1 lb baby potatoes, halved or quartered if large
  • 2 tablespoons olive oil, divided
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (or a mix of dried basil, oregano, and thyme)
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup low-sodium chicken broth
  • 1/2 lemon, juiced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Potatoes: Place the halved baby potatoes in a pot of salted water. Bring to a boil and cook for 8–10 minutes, until just fork-tender. Drain and set aside.
  2. Season the Chicken: In a bowl, toss the chicken cubes with 1 tablespoon olive oil, Italian herbs, dried parsley, paprika, salt, black pepper, and red pepper flakes (if using).
  3. Sear the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–6 minutes, turning occasionally, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  4. Sauté the Potatoes: In the same skillet, add the remaining 1 tablespoon olive oil and 1 tablespoon butter. Add the drained potatoes and cook for 4–5 minutes, stirring occasionally, until golden and crispy on the edges.
  5. Add Garlic & Broth: Push the potatoes to the side of the skillet. Add the minced garlic and sauté for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  6. Combine & Finish: Return the cooked chicken to the skillet. Toss everything together and cook for another 2–3 minutes, letting the flavors meld and the sauce reduce slightly.
  7. Add Cheese & Serve: Sprinkle the grated Parmesan over the chicken and potatoes. Toss to combine. Taste and adjust seasoning if needed.
  8. Garnish & Enjoy: Remove from heat. Garnish with fresh chopped parsley and serve hot.
