Ingredients

  • 1 1/2 pounds chicken tenders
  • 1 cup buttermilk

  • 1 teaspoon garlic powder

  • 2 large eggs
  • 1/2 cup all-purpose flour

For the Crazy Dipping Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sriracha or hot sauce
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder

Instructions

  1. In a large bowl, combine buttermilk and 1 tablespoon hot sauce. Add chicken tenders, toss to coat, and marinate for at least 15 minutes (up to 2 hours for more flavor).
  2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
  3. In a shallow bowl, mix panko, cornflakes, Parmesan, paprika, garlic powder, onion powder, salt, and pepper.
  4. In a second bowl, beat eggs. In a third bowl, add flour.
  5. Remove chicken from marinade. Dredge each tender in flour, dip in egg, then coat in the breadcrumb mixture, pressing to adhere.
  6. Arrange tenders on the prepared baking sheet. Spray tops lightly with cooking spray.
  7. Bake for 18–20 minutes, flipping halfway, until golden and cooked through.
  8. While tenders bake, mix all dipping sauce ingredients in a small bowl.
