- 1 1/2 cups panko breadcrumbs
- 1/2 cup crushed cornflakes
- 1/2 cup grated Parmesan cheese
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/2 cup all-purpose flour
- Cooking spray or oil (for baking)
For the Crazy Dipping Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon sriracha or hot sauce
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
Instructions
- In a large bowl, combine buttermilk and 1 tablespoon hot sauce. Add chicken tenders, toss to coat, and marinate for at least 15 minutes (up to 2 hours for more flavor).
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
- In a shallow bowl, mix panko, cornflakes, Parmesan, paprika, garlic powder, onion powder, salt, and pepper.
- In a second bowl, beat eggs. In a third bowl, add flour.
- Remove chicken from marinade. Dredge each tender in flour, dip in egg, then coat in the breadcrumb mixture, pressing to adhere.
- Arrange tenders on the prepared baking sheet. Spray tops lightly with cooking spray.
- Bake for 18–20 minutes, flipping halfway, until golden and cooked through.
- While tenders bake, mix all dipping sauce ingredients in a small bowl.
- Serve chicken tenders hot with crazy dipping sauce and extra hot sauce on the side.
Tips
- For extra crunch, double-coat the tenders in the breadcrumb mixture.
- Try different hot sauces in the marinade and dip for a flavor twist.
