Ingredients
For the Candied Walnuts:
- 1/2 cup walnut halves
- 1/2 cup granulated sugar
- 1/2 cup water
For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper (or black pepper)
- 1 large egg white
- 1/2 cup cornstarch
- Vegetable oil, for frying
For the Honey Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon sweetened condensed milk
- 1 teaspoon lemon juice
Instructions
1. Candy the Walnuts
- In a small saucepan, combine 1/2 cup sugar and 1/2 cup water. Bring to a boil over medium heat, stirring until the sugar dissolves.
- Add the walnut halves and boil for 2 minutes.
- Using a slotted spoon, remove the walnuts and place them on a parchment-lined baking sheet to dry and cool.
2. Prepare the Shrimp
- Pat the shrimp dry with paper towels. Season with salt and pepper.
- In a medium bowl, whisk the egg white until frothy. Add the shrimp and toss to coat.
- Add the cornstarch to a shallow dish. Dredge each shrimp in the cornstarch, shaking off any excess.
3. Fry the Shrimp
- Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
- Fry the shrimp in batches for 2-3 minutes, or until golden and crispy. Do not overcrowd the pan.
- Remove the shrimp with a slotted spoon and drain on a paper towel-lined plate.
4. Make the Honey Sauce
- In a large bowl, whisk together the mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth.
5. Combine and Serve
- Add the fried shrimp to the bowl with the honey sauce. Toss gently to coat.
- Add the candied walnuts and toss lightly.
- Serve immediately, garnished with extra walnuts if desired.
