Instructions

  1. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  2. Place the flour in a shallow dish. Dredge each fillet lightly in flour, shaking off excess.
  3. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Add the cod fillets and cook for 2–3 minutes per side, until golden and just cooked through. Transfer to a plate and tent with foil.
