- 1 pound ground chicken
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced

- 1 can (14 ounces) coconut milk
- 4 cups chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 cup baby spinach
- 2 packs of instant ramen noodles (discard seasoning packets)
- Salt and pepper to taste

- Prepare the Slow Cooker: Heat the olive oil in a skillet over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon. Transfer the browned chicken to the slow cooker.
