Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
For Rolling:
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- In a small bowl, mix 1/4 cup sugar with cinnamon.
- Scoop dough by rounded tablespoons, roll into balls, and coat in cinnamon sugar mixture.
- Place on prepared baking sheets, spacing 2 inches apart. Flatten slightly with your hand.
- Bake for 9-11 minutes, until edges are set and centers are soft. Cool on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
