Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt

For Rolling:

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. In a small bowl, mix 1/4 cup sugar with cinnamon.
  6. Scoop dough by rounded tablespoons, roll into balls, and coat in cinnamon sugar mixture.
  7. Place on prepared baking sheets, spacing 2 inches apart. Flatten slightly with your hand.
  8. Bake for 9-11 minutes, until edges are set and centers are soft. Cool on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
