Chorizo & Potato Breakfast Hash is a bold and flavorful way to start your morning! Spicy chorizo sausage, crispy potatoes, and colorful peppers come together in one skillet, topped with a fried or poached egg and fresh cilantro. It’s a satisfying breakfast that’s easy to make and packed with flavor.
Ingredients
- 1/2 lb Mexican chorizo sausage (casings removed)
- 2 tablespoons olive oil
- 1 lb russet potatoes, peeled and diced into 1/2-inch cubes
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika (optional)
- Salt and black pepper, to taste
- 4 large eggs (for serving, optional)
- Chopped fresh cilantro, for garnish
Instructions
- Heat 1 tbsp oil in a skillet. Cook chorizo until browned. Remove and set aside.
- Add more oil and potatoes. Cook until golden and tender, about 10-12 minutes.
- Add onion and peppers. Cook 4-5 minutes. Add garlic and paprika, cook 1 minute.
- Return chorizo to skillet. Stir and heat through. Season with salt and pepper.
- (Optional) Fry or poach eggs in another pan.
- Serve hash topped with eggs and cilantro.
