Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, sugar, and chicken broth until smooth. Set aside.
  3. Heat 1 tablespoon chili oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 4-5 minutes.
  4. Add garlic and ginger to the pork and cook for 1 minute until fragrant.
  5. Pour the peanut sauce into the skillet with the pork. Stir well and simmer for 2-3 minutes until slightly thickened.
