Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1.5 lbs baby potatoes, halved or quartered if large
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt (plus more to taste)
- 1/2 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
- 2 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the potatoes with 2 tablespoons olive oil, half the minced garlic, 1/2 tsp thyme, 1/2 tsp rosemary, 1/2 tsp oregano, 1/4 tsp paprika, 1/4 tsp salt, and 1/4 tsp black pepper. Spread the potatoes on a large baking sheet.
- Roast the potatoes for 15 minutes.
- While the potatoes are roasting, toss the chicken pieces with the remaining 1 tablespoon olive oil, remaining garlic, herbs, paprika, salt, and pepper.
- After 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side and add the chicken pieces to the other side of the sheet.
- Return the baking sheet to the oven and roast for another 18–20 minutes, or until the chicken is cooked through (internal temp 165°F) and potatoes are golden and tender.
- If desired, sprinkle Parmesan cheese over the chicken and potatoes during the last 2 minutes of roasting.
- Remove from oven. Toss everything together gently on the sheet pan.
- Serve in bowls, garnished with fresh parsley and lemon wedges.
