Cherry Spice Muffins

Cherry Spice Muffins are the perfect treat when fresh cherries are out of season. By soaking and puréeing dried cherries, you get a burst of cherry flavor in every bite—no need to wait for summer! These muffins are warmly spiced with cardamom, cinnamon, and allspice, making them a cozy choice for breakfast or a snack any time of year.

Ingredients

  • 1 cup dried cherries
  • 1 cup hot water (for soaking)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 teaspoons (1 tablespoon) ground cardamom
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 cup unsalted butter, melted and cooled
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt or sour cream

Instructions

  1. Place the dried cherries in a heatproof bowl. Pour 1 cup hot water over them and let soak for 20–30 minutes until soft. Drain well, then purée the cherries in a food processor or blender until mostly smooth (a few small pieces are fine).
  2. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cardamom, cinnamon, and allspice.
  4. In another bowl, whisk together the melted butter, sugar, eggs, vanilla, and yogurt (or sour cream) until smooth.
  5. Add the puréed cherries to the wet ingredients and mix well.
  6. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
