  • 4 large sweet potatoes

  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions

Sweet and Spicy Rub:

  • 2 tablespoons brown sugar
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Sweet Potatoes: Wash and dry the sweet potatoes. Pierce each potato several times with a fork.
  3. Apply the Rub: In a small bowl, mix together the brown sugar, cayenne pepper, smoked paprika, and salt. Rub this mixture over the sweet potatoes.
  4. Bake the Sweet Potatoes: Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
