Buko Pandan Jelly

Buko Pandan Jelly is a beloved Filipino dessert that combines the tropical flavors of young coconut and fragrant pandan in a creamy, refreshing treat. This easy recipe is perfect for parties, potlucks, or any time you want a taste of the Philippines at home!

Ingredients

  • 1 (25g) pack green pandan-flavored gelatin or agar-agar powder
  • 4 cups water (or coconut water for extra flavor)
  • 1/2 cup sugar (adjust to taste)
  • 2 cups young coconut meat (buko), shredded
  • 1 cup nata de coco, drained
  • 1 cup all-purpose cream (or heavy cream)
  • 1 cup sweetened condensed milk
  • 1/2 teaspoon pandan extract (if using unflavored gelatin)
  • Optional: 1/2 cup sago pearls, cooked and drained

Instructions

  1. Prepare the Jelly:
In a saucepan, combine the pandan-flavored gelatin powder, water (or coconut water), and sugar. Stir well.
Bring to a boil over medium heat, stirring constantly until the gelatin and sugar are fully dissolved.
If using unflavored gelatin, add the pandan extract at this stage.
Pour the mixture into a rectangular or square mold. Let it cool to room temperature, then refrigerate until fully set (about 1 hour).
  2. Cut the Jelly:
Once set, cut the jelly into small cubes.
  3. Combine Ingredients:
In a large mixing bowl, combine the jelly cubes, shredded young coconut, nata de coco, and cooked sago pearls (if using).
  4. Add Cream and Milk:
Pour in the all-purpose cream and sweetened condensed milk. Mix gently until everything is well combined.
  5. Chill:
Cover and refrigerate for at least 1 hour before serving. Serve cold for best taste.

Tips

  • Adjust the sweetness by adding more or less condensed milk or sugar.
  • For a richer dessert, use heavy cream instead of all-purpose cream.
  • Add kaong (sugar palm fruit) or cheese cubes for extra flavor and texture.
