For the Blue Cheese Dip:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon milk (optional, for thinning)
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

For Serving:

  • Celery sticks
  • Carrot sticks

Instructions

1. Prepare the Blue Cheese Dip

  1. In a small bowl, combine sour cream, mayonnaise, blue cheese, lemon juice, and garlic powder. Mix well.
  2. Season with salt and pepper to taste. Add milk if you prefer a thinner consistency.
  3. Cover and refrigerate until ready to serve.

2. Prepare the Chicken

  1. Preheat oven to 425°F (220°C) or heat oil in a deep skillet to 350°F (175°C) for frying.
  2. Set up three shallow bowls: one with flour mixed with garlic powder, paprika, salt, and pepper; one with beaten eggs; and one with panko breadcrumbs.
  3. Dredge each chicken piece in flour, dip in egg, then coat with panko breadcrumbs.
  4. For baking: Place chicken pieces on a wire rack set over a baking sheet. Spray lightly with cooking spray. Bake for 20–25 minutes, turning halfway, until golden and cooked through.
  5. For frying: Fry chicken pieces in batches for 4–5 minutes, until golden and cooked through. Drain on paper towels.

3. Toss in Buffalo Sauce

  1. In a large bowl, whisk together hot sauce and melted butter.
  2. Add cooked chicken pieces and toss to coat evenly.

4. Serve

  1. Arrange buffalo chicken on a platter with celery and carrot sticks.
  2. Serve with blue cheese dip on the side.

Tips

  • For extra crispiness, double-coat the chicken in panko.
  • Adjust the heat by using more or less hot sauce.
  • Try ranch dip as an alternative to blue cheese.
