Ingredients

  • For the Lemon Frosting:
  • 2 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter, melted
  • 1–2 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then add the vanilla extract, lemon juice, and lemon zest. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Gently fold in the blueberries, being careful not to crush them.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12–15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While the cookies cool, make the lemon frosting: In a medium bowl, whisk together the powdered sugar, lemon juice, lemon zest, and melted butter. Add milk, a little at a time, until the frosting is smooth and spreadable.
  10. Once the cookies are completely cool, spread a generous amount of lemon frosting on each cookie. Let the frosting set before serving.
