Ingredients
- For the Cookies:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract

- 2 3/4 cups all-purpose flour

- For the Lemon Frosting:
- 2 cups powdered sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter, melted
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the vanilla extract, lemon juice, and lemon zest. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Gently fold in the blueberries, being careful not to crush them.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12–15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- While the cookies cool, make the lemon frosting: In a medium bowl, whisk together the powdered sugar, lemon juice, lemon zest, and melted butter. Add milk, a little at a time, until the frosting is smooth and spreadable.
- Once the cookies are completely cool, spread a generous amount of lemon frosting on each cookie. Let the frosting set before serving.
