Spring is here in Northern California and I’m gearing up to host an Easter BBQ next weekend. With a bunch of food requirements to juggle (most notably a couple Gluten-free attendees), I wanted to whip up a menu that everyone would love, all while diving into some delicious Greek flavors. My primary idea was to grill a boneless leg of lam on the rotisserie, which I’ve eaten, but have never made before. I turned to The Cookbook to generate a recipe for the lamb and a handful of sides.
Greek Lamb Roast on the Rotisserie
I’m really excited to see how this boneless leg of lamb is going to work on the Rotisserie. I’m going to marinate it in a mix of fresh herbs and spices, then slow-cook it for a couple hours. We’re talking olive oil, lemon juice, garlic, rosemary, oregano, thyme, cumin, smoked paprika, and lemon zest. And to top it off, there’s a creamy harissa yogurt sauce made with Greek yogurt, harissa paste, lemon juice, olive oil, and honey. I’m really excited for the combo! Check out the full recipe here.
Appetizers and Sides for my Easter BBQ
To go with the lamb, I’ve lined up some Greek-inspired appetizers and sides for our Easter BBQ:
Baked Feta with Cherry Tomatoes and Olives

This one is based on a meal I had a few years ago in a Greek restaurant in Germany. Creamy baked feta with cherry tomatoes and Kalamata olives, drizzled with olive oil and sprinkled with oregano. Perfect for scooping up with some crusty bread. Get the full recipe here.
Greek Scalloped Potatoes
My wife wanted scalloped potatoes as part of the recipe, so I asked The Cookbook to create a greek twist for our Easter BBQ. The first version was good, but I wanted a touch of heat, so it suggest harissa for a little kick. Topped with Parmesan cheese and baked to golden perfection. Check it out here.
Greek Roasted Veggies
Since I’ve got my Easter BBQ going, I’m going to try and roast these veggies while the lamb is cooking. We’ve got red and yellow bell peppers, zucchini, cherry tomatoes, and butternut squash, all roasted with olive oil, lemon juice, and aromatic herbs. The recipe is for the oven, but I think I’m going to try and do it on the grill. Find the recipe here.

Honey Blueberry Granola Parfait

For dessert, we’re keeping it light and easy with Honey Blueberry Granola Parfaits. Layers of creamy Greek yogurt, fresh blueberries, crunchy granola, and a drizzle of honey. It’s a sweet way to wrap up the meal.
