Instructions

  1. Preheat your oven to 425°F (220°C).

  6. Arrange the potatoes in a single layer on a large baking sheet or roasting pan. Nestle the seasoned chicken thighs on top of the potatoes, skin side up.
  7. Bake for 40–45 minutes, or until the chicken skin is golden and crispy, the chicken is cooked through (internal temperature should reach 165°F/74°C), and the potatoes are tender.
