Ingredients
For the Bacon Jam:
- 1/2 pound thick-cut bacon, chopped
- 1 large yellow onion, finely diced
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
- 1 tablespoon maple syrup
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon black pepper
For the Dijonnaise:
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 teaspoon lemon juice
For the Burgers:
- 1 pound ground beef (80/20 blend)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 slices cheddar cheese
- 4 brioche buns, split and toasted
- 1 cup arugula or lettuce
- 1 large tomato, sliced
- 1 small red onion, thinly sliced (optional)
- Butter for toasting buns
Instructions
1. Make the Bacon Jam
- In a large skillet over medium heat, cook the chopped bacon until crispy, about 8–10 minutes. Remove bacon with a slotted spoon and set aside. Drain all but 1 tablespoon of bacon fat from the pan.
- Add diced onion to the pan and cook over medium-low heat until soft and caramelized, about 10–12 minutes.
- Stir in brown sugar, balsamic vinegar, maple syrup, Worcestershire sauce, and black pepper. Return the bacon to the pan.
- Simmer, stirring occasionally, until the mixture is thick and jammy, about 10 minutes. Remove from heat and let cool slightly.
2. Make the Dijonnaise
- In a small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth. Set aside.
3. Prepare the Burgers
- Preheat grill or skillet to medium-high heat.
- Gently form ground beef into 4 equal patties. Season both sides with salt and pepper.
- Cook patties for 3–4 minutes per side for medium, adding a slice of cheddar cheese to each patty during the last minute of cooking. Cover to melt cheese.
- Butter the cut sides of the brioche buns and toast until golden.
4. Assemble the Burgers
- Spread Dijonnaise on both the top and bottom buns.
- Place a handful of arugula or lettuce on the bottom bun, followed by a slice of tomato and red onion (if using).
- Add the cheeseburger patty, then top generously with bacon jam.
- Cap with the top bun. Serve immediately.
Tips
- For extra flavor, add a splash of bourbon to the bacon jam while simmering.
- Swap cheddar for Swiss or blue cheese for a different twist.
- The bacon jam can be made ahead and stored in the fridge for up to a week.
