Ingredients
- 6 large flour tortillas
- 8 slices bacon
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 2 green onions, thinly sliced
- 2 tablespoons butter
- Salsa, for serving (optional)
Instructions
- Cook bacon in a skillet until crispy. Chop into pieces.
- Whisk eggs, milk, salt, and pepper in a bowl.
- Wipe skillet, melt butter, and scramble eggs until just set.
- Lay out 3 tortillas. Add eggs, bacon, cheese, and green onions. Top with other tortillas.
- Cook each quesadilla in a skillet with butter, 2-3 minutes per side, until golden and melty.
- Cool slightly, cut into wedges, and serve with salsa.
