Ingredients
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3 cups peeled, cored, and diced apples (about 3 medium apples)
- 1 cup chopped pecans or walnuts (optional)
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
- In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together oil, eggs, and vanilla. Add wet ingredients to dry and mix until just combined.
- Fold in apples and nuts (if using).
- Pour batter into prepared Bundt pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
- For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake before serving.
