Old-Fashioned Fresh Apple Bundt Cake

Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 cups peeled, cored, and diced apples (about 3 medium apples)
  • 1 cup chopped pecans or walnuts (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together oil, eggs, and vanilla. Add wet ingredients to dry and mix until just combined.
  4. Fold in apples and nuts (if using).
  5. Pour batter into prepared Bundt pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
  8. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake before serving.
