Ingredients

  • 2 (6-ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 5 ounces fresh spinach
  • 1/2 cup light cream
  • 1/4 cup white wine (or chicken broth)
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Pat the salmon fillets dry and season both sides with salt and pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin side down if using skin-on, and cook for 3–4 minutes per side, or until golden and just cooked through. Remove salmon from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for 3–4 minutes until softened and golden.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the fresh spinach and cook, stirring, until wilted, about 1–2 minutes.
  6. Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the pan. Let simmer for 1–2 minutes.
  7. Reduce heat to low and stir in the light cream. Simmer for 2–3 minutes until the sauce thickens slightly.
  8. Return the salmon fillets to the skillet, nestling them into the creamy sauce. Spoon some sauce over the top and let everything heat through for 1–2 minutes.
  9. Sprinkle with chopped fresh parsley and serve immediately, spooning extra sauce over the salmon.
