Ingredients
For the Sheet Pan
- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 1 package (12–16 oz) meatballs (fully cooked or raw; chicken, turkey, beef, or plant-based)
- 1 large red onion, cut into wedges
- 2 bell peppers (any color), sliced
- 2 medium zucchini, sliced into half-moons
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 tbsp olive oil
- 2 tsp garam masala
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp chili powder (optional, for heat)
- 1/2 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
For the Cucumber Yogurt Sauce
- 1 cup plain Greek yogurt
- 1/2 cup cucumber, finely diced
- 2 tbsp fresh cilantro, chopped
- 1 tbsp fresh mint, chopped (optional)
- 1/2 tsp ground cumin
- 1/2 tsp salt

Instructions
1. Prepare the Sheet Pan Dinner
- Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
- In a large bowl, toss tofu cubes, onion wedges, bell peppers, zucchini, and chickpeas with olive oil, garam masala, cumin, coriander, turmeric, chili powder, smoked paprika, salt, and black pepper.
- Spread the tofu and veggie mixture evenly on the prepared sheet pan.
- If using fully cooked meatballs: Nestle them among the veggies and tofu. Roast for 20–25 minutes, stirring veggies halfway through, until everything is golden and heated through.
- If using raw meatballs: Nestle them among the veggies and tofu. Roast for 25–30 minutes, stirring veggies halfway through, until meatballs are cooked through (internal temp 165°F for poultry, 160°F for beef/pork) and veggies are golden and tender.

- In a bowl, combine Greek yogurt, cucumber, cilantro, mint (if using), cumin, salt, and lemon juice. Mix well and refrigerate until ready to serve.
3. Heat the Lentils
