Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb), cut into chunks
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 large egg
  • 1/2 cup whole milk
  • 1 cup all-purpose flour (divided)
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 tablespoon powdered sugar
  • Vegetable oil, for frying

Instructions

  1. Prepare the Chicken: Place chicken chunks in a food processor. Add salt, pepper, garlic powder, onion powder, and paprika. Pulse until a smooth paste forms.
  2. Shape the Nuggets: Wet your hands and shape the chicken mixture into small, nugget-sized pieces (about 1.5 inches wide). Place them on a parchment-lined tray.
  3. Freeze: Freeze the shaped nuggets for 30 minutes to firm them up.
  4. Make the Batter: In a bowl, whisk together 1/2 cup flour, cornstarch, baking powder, powdered sugar, egg, and milk until smooth. The batter should be thick but pourable.
  5. Dredge the Nuggets: Place the remaining 1/2 cup flour in a shallow dish. Coat each nugget in flour, then dip into the batter, letting excess drip off.
  6. Fry: Heat 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Fry nuggets in batches for 3–4 minutes per side, or until golden brown and cooked through.
  7. Drain and Serve: Remove nuggets with a slotted spoon and drain on a paper towel-lined plate. Serve hot with your favorite dipping sauces.
